Celebrate the 4th of July in style with these dazzling Sparkler Cupcakes! Moist and tender vanilla cupcakes are topped with a swirled buttercream frosting in red, white, and blue, then finished with a shower of sparkling sprinkles for an irresistible patriotic treat.
Ingredients
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup milk
– Red and blue food coloring
– Patriotic sprinkles
Instructions
1. Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
4. Alternate mixing in the flour mixture and milk in three additions, beginning and ending with the flour mixture. Mix just until combined.
5. Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.
6. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
7. Make the frosting: In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar and beat until smooth and fluffy.
8. Divide the frosting into three bowls. Tint one portion red and one portion blue with food coloring.
9. Pipe the colored frostings onto the cooled cupcakes in a swirled pattern. Top with patriotic sprinkles.
