Description

Indulge in these incredibly delicious air-fried zucchini boats loaded with creamy ranch, crispy bacon, and melted cheddar cheese for a quick and easy restaurant-quality meal.


Ingredients

– 4 medium zucchini, halved lengthwise

– 4 oz cream cheese, softened

– 1/2 cup ranch dressing

– 1/2 cup shredded cheddar cheese

– 6 slices bacon, cooked and crumbled

– 2 tbsp chopped fresh parsley

– Salt and pepper to taste


Instructions

1. 1. Preheat air fryer to 400°F.

2. 2. Scoop out the centers of the zucchini halves, leaving a 1/4-inch shell.

3. 3. In a medium bowl, mix the cream cheese, ranch dressing, 1/4 cup of the cheddar cheese, and half of the crumbled bacon. Season with salt and pepper.

4. 4. Spoon the ranch mixture into the zucchini boats, mounding it up slightly.

5. 5. Place the stuffed zucchini boats in the air fryer basket and cook for 12-15 minutes, until the zucchini is tender and the cheese is melted and bubbly.
