Ingredients

– 8 ounces lasagna noodles, broken into 1-inch pieces

– 2 cups milk

– 1 cup chicken broth

– 1 jar (15 ounces) Alfredo sauce

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese

– 2 tablespoons chopped fresh parsley


Instructions

1. 1. In a large saucepan, bring 4 cups of water to a boil. Add the broken lasagna noodles and cook according to package instructions, about 8-10 minutes, until tender. Drain and set aside.

2. 2. In the same saucepan, combine the milk, chicken broth, and Alfredo sauce. Whisk until well blended and heated through, about 5 minutes.

3. 3. Add the cooked lasagna noodles to the sauce and stir to combine. Simmer for 5 minutes, allowing the noodles to absorb the flavors.

4. 4. Remove from heat and stir in the mozzarella and Parmesan cheeses until melted and incorporated.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add cooked ground beef or Italian sausage to the soup. Leftover soup can be stored in the refrigerator for up to 4 days.
