Description

Prepare to indulge in the melt-in-your-mouth magic of Andalusian Alfajores – a foolproof recipe for irresistible shortbread cookies that come together in just 20 minutes.

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt

– Powdered sugar for dusting

Instructions

1. 1. Preheat your oven to 350°F (180°C).

2. 2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. 3. Beat in the egg and vanilla extract until well combined.

4. 4. Gradually add the flour and salt, mixing until a dough forms.

5. 5. Roll the dough out on a lightly floured surface to about 1/4-inch thickness.

6. 6. Use a round cookie cutter or the rim of a glass to cut out circular cookies.

7. 7. Place the cookies on a parchment-lined baking sheet, spacing them about 1 inch apart.

8. 8. Bake for 12-15 minutes, or until the edges are lightly golden.

9. 9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

10. 10. Dust the cooled cookies generously with powdered sugar.

Notes

For a more indulgent twist, you can sandwich a dollop of dulce de leche or chocolate hazelnut spread between two cookies. The cookies can be stored in an airtight container for up to 1 week.
