Ingredients
– 4 boneless, skinless chicken breasts
– 4 oz brie cheese, cubed
– 1 apple, peeled, cored, and diced
– 2 tbsp fresh thyme leaves
– 1 tsp garlic powder
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. Preheat the oven to 375°F (190°C).
2. Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
3. In a small bowl, combine the brie cheese, diced apple, 1 tbsp of the thyme leaves, garlic powder, salt, and pepper.
4. Stuff the cheese and apple mixture into the pockets of the chicken breasts.
5. Place the stuffed chicken breasts in a baking dish and sprinkle the remaining 1 tbsp of thyme leaves over the top.
6. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
