Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 2 medium Granny Smith apples, peeled, cored, and sliced
– 1 cup shredded sharp cheddar cheese
– 2 tablespoons granulated sugar
– 1 teaspoon ground cinnamon
Instructions
1. In a food processor, pulse the flour and salt together. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.
2. Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough just begins to hold together.
3. Turn the dough out onto a lightly floured surface and gather it into a disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
4. Preheat the oven to 400°F (200°C).
5. On a lightly floured surface, roll the chilled dough into a 12-inch circle, about 1/4-inch thick.
6. Arrange the apple slices in a single layer on the dough, leaving a 2-inch border.
7. Sprinkle the shredded cheddar cheese evenly over the apples.
8. In a small bowl, mix the sugar and cinnamon. Sprinkle the cinnamon-sugar mixture over the cheese and apples.
9. Fold the 2-inch dough border over the filling, pleating it as you go and leaving the center exposed.
10. Bake for 30-35 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
11. Allow the galette to cool for 10 minutes before slicing and serving.
Notes
For a flakier crust, you can chill the dough for up to 2 days before rolling and baking. The galette can be stored at room temperature for up to 3 days.
