Ingredients
– 3-4 lb pork shoulder, cut into 2-inch chunks
– 2 cups apple cider
– 1 onion, diced
– 3 cloves garlic, minced
– 2 sprigs fresh thyme
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. Preheat the oven to 325°F.
2. Season the pork chunks with salt and pepper.
3. Heat a large oven-safe Dutch oven or heavy-bottomed pot over medium-high heat. Add the pork and sear on all sides until golden brown, about 3-4 minutes per side.
4. Remove the pork from the pot and set aside. Add the onions and garlic to the pot and cook for 2-3 minutes, stirring frequently, until fragrant.
5. Pour in the apple cider and use a wooden spoon to scrape up any browned bits from the bottom of the pot.
6. Return the seared pork to the pot and add the fresh thyme. Cover and transfer to the preheated oven.
7. Braise the pork for 2-2.5 hours, or until the meat is very tender and falling apart.
8. Remove the pot from the oven and let the pork rest for 10 minutes before serving.
Notes
– For extra depth of flavor, you can brown the pork in batches before braising.
– Serve the Apple Cider Braised Pork Shoulder over mashed potatoes, buttered noodles, or with roasted vegetables.
