Description

Ingredients

– 1 cup unsalted butter, softened

– 1/2 cup granulated sugar

– 1 egg

– 1 tsp vanilla extract

– 2 1/4 cups all-purpose flour

– 1/2 tsp salt

– 2 medium apples, peeled, cored, and finely chopped

– 1/2 cup brown sugar

– 1 tsp ground cinnamon

– 1/4 cup caramel sauce

– Powdered sugar for dusting


Instructions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.

3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

4. In a small bowl, mix together the chopped apples, brown sugar, and cinnamon.

5. Scoop rounded tablespoons of dough and flatten into disks. Place a heaping teaspoon of the apple mixture in the center of each disk. Fold the dough over the filling and pinch to seal.

6. Place the filled cookies on the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 18-20 minutes, until lightly golden brown. Allow to cool for 5 minutes, then drizzle with caramel sauce and dust with powdered sugar.

Notes

For a deeper apple flavor, use a combination of tart and sweet apples. The caramel sauce can be homemade or store-bought. These cookies can be stored in an airtight container for up to 5 days.
