Ingredients

– 12 fresh apricots, halved and pitted

– 4 oz goat cheese, softened

– 2 tbsp honey

– 1 tsp chopped fresh thyme

– 1/4 tsp sea salt

– 1/8 tsp black pepper


Instructions

1. 1. Preheat your oven to 375°F (190°C).

2. 2. In a small bowl, mix together the softened goat cheese, honey, thyme, salt, and pepper until well combined.

3. 3. Place the apricot halves, cut-side up, on a baking sheet lined with parchment paper.

4. 4. Spoon a small amount of the goat cheese mixture onto the center of each apricot half.

5. 5. Bake for 10-12 minutes, or until the goat cheese is slightly softened and the apricots are warm.
