Description

This Asian-Style Smashed Cucumber Salad is a refreshing and flavorful dish that’s perfect as a side or appetizer. The crisp cucumbers are smashed and tossed in a tangy, slightly spicy dressing for a mouthwatering experience.


Ingredients

– 2 English cucumbers, smashed and cut into 1-inch pieces

– 2 tablespoons rice vinegar

– 1 tablespoon sesame oil

– 1 tablespoon soy sauce

– 1 teaspoon chili oil (or to taste)

– 1 teaspoon toasted sesame seeds

– 1 tablespoon chopped fresh cilantro

– 1 tablespoon chopped fresh mint

– 1 clove garlic, minced

– 1/2 teaspoon salt


Instructions

1. In a large bowl, combine the smashed cucumber pieces.

2. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, and chili oil.

3. Pour the dressing over the cucumbers and toss to coat evenly.

4. Sprinkle the toasted sesame seeds, chopped cilantro, chopped mint, and minced garlic over the salad.

5. Season with salt and toss to combine.

6. Serve chilled or at room temperature.

Notes

For a milder flavor, use less chili oil. You can also add thinly sliced red onion or shredded carrots for extra crunch and color.
