Description

Crisp Honeycrisp apples, creamy feta cheese, and a variety of fresh greens come together in this delightful Autumn Harvest Salad. Drizzled with a light honey-vinaigrette dressing, this salad is the perfect blend of sweet, tangy, and seasonal flavors.


Ingredients

– 6 cups mixed greens (such as spinach, arugula, and kale)

– 2 Honeycrisp apples, cored and sliced

– 1/2 cup crumbled feta cheese

– 1/4 cup toasted walnuts (optional)

– 2 tablespoons apple cider vinegar

– 1 tablespoon honey

– 1 tablespoon olive oil

– 1/2 teaspoon Dijon mustard

– Salt and pepper to taste


Instructions

1. 1. In a large salad bowl, combine the mixed greens, sliced Honeycrisp apples, and crumbled feta cheese.

2. 2. In a small bowl, whisk together the apple cider vinegar, honey, olive oil, and Dijon mustard. Season with salt and pepper to taste.

3. 3. Drizzle the honey-vinaigrette dressing over the salad and toss gently to coat.

Notes

– Feel free to substitute other types of apples if Honeycrisp are not available.
