Ingredients

– 6 cups mixed greens (such as spinach, arugula, and kale)

– 1 cup roasted butternut squash cubes

– 1 apple, diced

– 1/2 cup dried cranberries

– 1/2 cup toasted pecans

– 2 tablespoons olive oil

– 1 tablespoon balsamic vinegar

– 1 teaspoon Dijon mustard

– 1 teaspoon honey

– Salt and pepper to taste


Instructions

1. 1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with a drizzle of olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender and caramelized.
