Description

Baghali Ghatogh (Beans and Eggs) is a delicious and comforting Persian dish that combines tender green beans, creamy eggs, and aromatic spices. It’s a simple, yet flavorful meal that’s perfect for any occasion.


Ingredients

– 1 pound fresh green beans, trimmed and cut into 1-inch pieces

– 6 large eggs

– 1 onion, diced

– 3 cloves garlic, minced

– 1 teaspoon ground turmeric

– 1 teaspoon ground cumin

– 1/2 teaspoon ground coriander

– 1/4 cup vegetable or olive oil

– Salt and pepper to taste


Instructions

1. In a large skillet, heat the oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

2. Add the minced garlic and continue to sauté for 1 minute, until fragrant.

3. Add the trimmed and cut green beans to the skillet. Season with the turmeric, cumin, coriander, salt, and pepper. Stir to coat the beans in the spices.

4. Cook the beans for 5-7 minutes, stirring occasionally, until they are tender but still have a slight bite.

5. Crack the eggs directly into the skillet, being careful not to break the yolks. Cover the skillet and cook for 3-5 minutes, or until the eggs are cooked to your desired doneness.

6. Gently stir the eggs into the beans, being careful not to overmix. Serve the Baghali Ghatogh (Beans and Eggs) hot, garnished with fresh herbs if desired.

Notes

For a heartier meal, serve the Baghali Ghatogh (Beans and Eggs) with warm pita bread or rice. You can also adjust the spice levels to your preference by adding more or less of the turmeric, cumin, and coriander.
