Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 cup apple cider
– 1 teaspoon vanilla extract
for the glaze:
– 2 cups powdered sugar
– 1/4 cup maple syrup
– 1/2 teaspoon ground cinnamon
– 2-3 tablespoons milk or cream
Instructions
1. 1. Preheat the oven to 350°F. Grease a doughnut pan with non-stick cooking spray.
2. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. 3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the apple cider and vanilla.
4. 4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
5. 5. Spoon the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
6. 6. Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean. Allow the doughnuts to cool in the pan for 5 minutes before transferring to a wire rack.
7. 7. In a medium bowl, whisk together the powdered sugar, maple syrup, and cinnamon. Add the milk or cream, 1 tablespoon at a time, until the glaze reaches your desired consistency.
8. 8. Dip the tops of the cooled doughnuts into the glaze, letting any excess drip off. Place the glazed doughnuts back on the wire rack to set.
9. 9. Serve the Baked Apple Cider Doughnuts with Cinnamon Maple Glaze warm or at room temperature. Enjoy!
Notes
For a cakier texture, reduce the apple cider to 3/4 cup. Store leftover doughnuts in an airtight container at room temperature for up to 3 days.
