Description

Baked Corn Casserole is a comforting and creamy side dish that’s bursting with fresh corn flavor. This easy-to-make casserole is the perfect accompaniment to any meal, from weeknight dinners to holiday feasts.

Ingredients

– 4 cups fresh corn kernels (about 6 ears)

– 1 cup shredded cheddar cheese

– 1/2 cup unsalted butter, melted

– 1/2 cup milk

– 2 eggs, beaten

– 1/4 cup all-purpose flour

– 1 teaspoon salt

– 1/2 teaspoon black pepper

Instructions

1. 1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.

2. 2. In a large bowl, combine the corn, cheese, melted butter, milk, eggs, flour, salt, and pepper. Mix well until fully combined.

3. 3. Transfer the mixture to the prepared baking dish and spread it out evenly.

4. 4. Bake for 30-35 minutes, or until the top is golden brown and the casserole is set.

5. 5. Allow the casserole to cool for 5 minutes before serving.

Notes

For a creamier casserole, use half-and-half or heavy cream instead of milk. You can also add diced bell peppers, chopped onions, or other vegetables to the mix. Leftovers can be stored in the refrigerator for up to 4 days.
