Description
Tender and juicy chicken breasts coated in a sweet and tangy balsamic fig glaze, making for a quick and flavor-packed weeknight dinner.
Ingredients
– 1 pound boneless, skinless chicken breasts
– 1/2 cup balsamic vinegar
– 1/2 cup dried figs, chopped
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions
1. Pat the chicken breasts dry and season with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, or until golden brown.
3. In a small saucepan, combine the balsamic vinegar, chopped figs, brown sugar, and garlic. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens.
4. Add the cooked chicken to the balsamic fig sauce and turn to coat the chicken evenly. Simmer for an additional 2-3 minutes, until the chicken is fully cooked through.
5. Sprinkle the chicken with the dried thyme and serve immediately.
Notes
This dish pairs well with roasted vegetables or a fresh green salad. The balsamic fig glaze can also be used on pork chops or salmon.
