Description

Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 tablespoons olive oil

– 1/4 cup mayonnaise

– 2 tablespoons Sriracha or other hot sauce

– 2 tablespoons honey

– 1 teaspoon rice vinegar

– 1/2 teaspoon garlic powder

– 1/2 teaspoon ground ginger

– 1 cup shredded cabbage

– 1 cup shredded carrots

– 2 green onions, sliced

– 2 cups cooked white or brown rice


Instructions

1. In a large skillet, heat the olive oil over medium-high heat.

2. Add the chicken and cook until browned and cooked through, about 8-10 minutes, stirring occasionally.

3. In a small bowl, whisk together the mayonnaise, Sriracha, honey, and rice vinegar.

4. Add the garlic powder and ground ginger to the sauce and stir to combine.

5. In a large bowl, combine the cooked chicken, shredded cabbage, shredded carrots, and sliced green onions.

6. Drizzle the creamy Sriracha sauce over the chicken and veggie mixture, and toss to coat everything evenly.

7. Serve the Bang Bang Chicken Bowl over cooked rice.

Notes

For a milder version, start with 1 tablespoon of Sriracha and adjust to your desired spice level. You can also add diced cucumber, chopped cilantro, or crushed peanuts as additional toppings.
