Description

Ingredients

– 1 cup pearl barley

– 4 cups low-sodium vegetable or chicken broth

– 2 carrots, peeled and diced

– 1 onion, diced

– 2 celery stalks, diced

– 3 garlic cloves, minced

– 2 tablespoons olive oil

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. 1. In a large pot, heat the olive oil over medium heat.

2. 2. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

3. 3. Stir in the minced garlic and cook for 1 minute until fragrant.

4. 4. Pour in the broth and add the pearl barley. Bring the mixture to a boil.

5. 5. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the barley is tender.
