Ingredients
– 1 lb boneless, skinless chicken breasts
– 2 medium sweet potatoes, peeled and cubed
– 1/2 cup BBQ sauce
– 1 tbsp olive oil
– 1 tsp garlic powder
– 1 tsp smoked paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Preheat oven to 400°F. Toss the cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly caramelized.
2. 2. In a large skillet or grill pan, cook the chicken breasts over medium-high heat for 5-7 minutes per side, or until cooked through. Brush the chicken with BBQ sauce during the last 2 minutes of cooking.
3. 3. Slice or shred the cooked chicken and place it in a bowl. Add the roasted sweet potatoes and drizzle with any remaining BBQ sauce from the pan.
