Description

Enjoy this quick and easy Beef And Vegetable Stir Fry for a delicious and healthy weeknight meal. Tender beef, crisp vegetables, and a bold Asian-inspired sauce come together in just 30 minutes.


Ingredients

– 1 lb beef, thinly sliced

– 2 cups broccoli florets

– 1 red bell pepper, sliced

– 1 onion, sliced

– 3 cloves garlic, minced

– 2 tbsp soy sauce

– 2 tbsp rice vinegar

– 1 tbsp brown sugar

– 1 tsp sesame oil

– 1 tsp cornstarch

– Salt and pepper to taste

– Cooked rice, for serving


Instructions

1. – In a large skillet or wok, heat 1 tbsp oil over high heat.

2. – Add the beef and stir-fry until browned, about 3-4 minutes. Remove beef from the pan.

3. – Add the remaining 1 tbsp oil to the pan. Stir-fry the broccoli, bell pepper, and onion for 3-4 minutes until crisp-tender.

4. – Add the garlic and stir-fry for 1 minute until fragrant.

5. – In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch.

6. – Pour the sauce into the pan and let it simmer for 1-2 minutes until thickened.

7. – Return the beef to the pan and toss everything together until well coated.

8. – Serve the Beef And Vegetable Stir Fry immediately over steamed rice.

Notes

For a spicier stir-fry, add a teaspoon of red pepper flakes or sriracha to the sauce. You can also swap in different vegetables like snow peas, mushrooms, or bok choy.
