Ingredients

– 1 lb ground beef

– 1 onion, diced

– 1 bell pepper, diced

– 2 cans (15 oz each) diced tomatoes

– 1 can (15 oz) black beans, drained and rinsed

– 1 can (15 oz) kidney beans, drained and rinsed

– 2 cups beef broth

– 1 packet taco seasoning

– 1 tsp cumin

– 1 tsp chili powder

– Salt and pepper to taste

– Toppings: shredded cheese, sour cream, tortilla chips, chopped cilantro


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. – Add the diced onion and bell pepper to the pot and sauté for 3-4 minutes, until softened.

3. – Stir in the diced tomatoes, black beans, kidney beans, beef broth, taco seasoning, cumin, and chili powder. Season with salt and pepper to taste.

4. – Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded and the soup has thickened slightly.

5. – Serve the Beef Taco Soup hot, topped with shredded cheese, sour cream, tortilla chips, and chopped cilantro.
