Ingredients
– 4 medium beets, peeled and diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 cup heavy cream
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 12 ounces linguine or penne pasta
– Chopped parsley for garnish
Instructions
1. Preheat the oven to 400°F. Toss the diced beets with the olive oil and season with salt and pepper. Roast for 25-30 minutes, or until the beets are tender.
2. In a blender or food processor, combine the roasted beets, garlic, and heavy cream. Blend until smooth and creamy.
3. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
4. Drain the pasta and return it to the pot. Pour the beetroot sauce over the pasta and toss to coat evenly.

Notes
