Description

Beorn’s Honey Cakes are a delightful, old-fashioned treat that will transport you to the Misty Mountains of Middle-earth. These 15-minute cakes are bursting with the rich, aromatic flavors of honey, butter, and warm spices, creating a life-changing experience for your taste buds.


Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1/2 cup honey, plus more for drizzling

– 2 large eggs

– 1 teaspoon vanilla extract

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg


Instructions

– Preheat the oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.

– In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

– In a large bowl, beat the butter and 1/2 cup of honey until light and fluffy, about 2-3 minutes.

– Add the eggs, one at a time, beating well after each addition. Stir in the vanilla, cinnamon, and nutmeg.

– Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

– Scoop the batter by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.

– Bake for 12-15 minutes, or until the cakes are golden brown and a toothpick inserted into the center comes out clean.

– Remove the cakes from the oven and drizzle them generously with additional honey while still warm.

– Serve the Beorn’s Honey Cakes warm or at room temperature, and enjoy the flavors of the Misty Mountains.

Notes

For a variation, you can add chopped walnuts or pecans to the batter. These cakes also pair beautifully with a cup of strong black tea or a glass of cold milk.
