Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup fresh or frozen cherries, pitted and halved
– 1 cup semisweet chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, cream the butter and sugar until light and fluffy, about 2-3 minutes.
4. Beat in the egg and vanilla extract until well combined.
5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
6. Fold in the cherries and chocolate chips.
7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
8. Bake for 12-15 minutes, or until the edges are set and the centers are still slightly soft.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
10. Drizzle the cooled cookies with melted chocolate, if desired.
Notes
For a deeper chocolate flavor, use dark cocoa powder. You can also substitute dried cherries for fresh or frozen cherries. These cookies can be stored in an airtight container at room temperature for up to 5 days.
