Description

Indulge in the irresistible combination of juicy blackberries and crunchy pistachios in these decadent Blackberry Pistachio Dream Bars. A buttery, shortbread-like crust provides the perfect base for this heavenly treat.


Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 eggs

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 2 cups fresh blackberries

– 1 cup shelled, roasted and salted pistachios, chopped


Instructions

1. 1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.

2. 2. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.

3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

4. 4. Press half the dough into the prepared baking pan. Arrange the blackberries evenly over the dough, then sprinkle the chopped pistachios on top.

5. 5. Crumble the remaining dough over the top, covering the berries and nuts as best as possible.

6. 6. Bake for 35-40 minutes, until the top is golden brown. Allow to cool completely before cutting into bars.

Notes

For a prettier presentation, you can reserve a few blackberries and pistachios to garnish the top of the bars after baking. These bars can be stored in an airtight container at room temperature for up to 4 days.
