Ingredients

– 1 cup blue cornmeal

– 1 cup all-purpose flour

– 1 tablespoon baking powder

– 1 teaspoon salt

– 2 eggs

– 1 1/2 cups milk

– 4 tablespoons unsalted butter, melted

– 8 ounces chorizo sausage, crumbled


Instructions

1. In a large bowl, whisk together the blue cornmeal, all-purpose flour, baking powder, and salt.

2. In a separate bowl, beat the eggs. Then, stir in the milk and melted butter.

3. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the crumbled chorizo sausage.

4. Preheat a waffle iron and coat it with non-stick cooking spray. Pour the batter onto the hot waffle iron and cook for 3-5 minutes, or until golden brown and crispy.
