Description

Ingredients

– 2 cups all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 1/2 cups granulated sugar

– 2 large eggs

– 2 teaspoons blue food coloring


Instructions

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

4. Add the eggs, one at a time, beating well after each addition. Stir in the blue food coloring until the batter is evenly colored.

5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6. Scoop the dough by the tablespoonful and place them about 2 inches apart on the prepared baking sheet.

7. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.

8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a more pronounced cocoa flavor, you can increase the cocoa powder to 3/4 cup. Store the cookies in an airtight container at room temperature for up to 5 days.
