Ingredients
– 8 ounces goat cheese, softened
– 1 cup fresh blueberries
– 1/4 cup balsamic vinegar
– 2 tablespoons honey
– 1 teaspoon fresh thyme leaves

Instructions
1. In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat and cook, stirring occasionally, until the mixture has reduced by half and is slightly thickened, about 5-7 minutes. Set aside to cool slightly.
2. In a small bowl, mix the softened goat cheese with a pinch of salt and pepper until well combined.
3. Spoon or pipe the goat cheese mixture onto a serving platter or board, creating small mounds or dollops.
4. Top each mound of goat cheese with a few fresh blueberries.
