Description

Bok Choy Fried Rice is a quick, flavorful, and nutritious stir-fry that’s perfect for busy weeknights. This dish features fresh bok choy, aromatic rice, and a savory Asian-inspired sauce, making it a delicious and healthy meal.


Ingredients

– 2 cups cooked jasmine rice

– 1 pound bok choy, chopped

– 1 cup diced carrots

– 1/2 cup diced onion

– 2 cloves garlic, minced

– 2 tablespoons soy sauce

– 1 tablespoon sesame oil

– 1 teaspoon grated ginger

– 1/4 teaspoon red pepper flakes (optional)

– Salt and pepper to taste


Instructions

1. Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of sesame oil.

2. Add the chopped bok choy, carrots, and onions. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

3. Push the vegetables to the side of the wok, then add the remaining 1 tablespoon of sesame oil and the minced garlic. Cook for 1 minute, stirring constantly, until fragrant.

4. Add the cooked rice, soy sauce, grated ginger, and red pepper flakes (if using). Toss everything together and continue to stir-fry for 2-3 minutes, until the rice is heated through and the flavors are well combined.

5. Season with salt and pepper to taste.

6. Serve hot, garnished with additional chopped bok choy or green onions if desired.

Notes

This dish can be easily customized by adding your favorite protein, such as shrimp, chicken, or tofu. You can also adjust the spice level by adding more or less red pepper flakes.
