Juicy, flavor-packed Bourbon BBQ-Glazed Meatloaf with a crispy bacon criss-cross topping – the ultimate comfort food classic that’s perfect for a cozy dinner.
Ingredients
– 2 lbs ground beef
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 cup panko breadcrumbs
– 2 eggs
– 1/2 cup milk
– 1/4 cup bourbon
– 1/2 cup barbecue sauce
– 1 tsp salt
– 1/2 tsp black pepper
– 8 slices bacon
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a large bowl, combine the ground beef, onion, garlic, panko, eggs, milk, 1/4 cup bourbon, 1/4 cup barbecue sauce, salt, and pepper. Mix until well incorporated.
3. 3. Shape the mixture into a loaf and place in a baking dish.
4. 4. In a small bowl, mix the remaining 1/4 cup barbecue sauce.
5. 5. Spread the barbecue sauce mixture over the top of the meatloaf.
6. 6. Arrange the bacon slices in a criss-cross pattern over the top of the meatloaf.
7. 7. Bake for 55-60 minutes, or until the meatloaf is cooked through and the bacon is crispy.
8. 8. Let the meatloaf rest for 5-10 minutes before slicing and serving.
Notes
For a spicier kick, add a dash of cayenne pepper or hot sauce to the barbecue sauce mixture. You can also use a combination of ground beef and ground pork for extra flavor.
