Description

Indulge in the ultimate breakfast poutine with creamy hollandaise sauce for a satisfying and flavor-packed morning meal.


Ingredients

– 2 lbs russet potatoes, cut into 1/2-inch thick fries

– 4 eggs

– 1 cup cheese curds

– 6 slices bacon, cooked and crumbled

– 1/2 cup unsalted butter

– 2 egg yolks

– 2 tbsp lemon juice

– 1 tsp Dijon mustard

– Salt and pepper to taste


Instructions

1. – Preheat oven to 400°F. Spread fries on a baking sheet and bake for 25-30 minutes, flipping halfway, until golden and crispy.

2. – In a small saucepan, melt the butter over medium heat. Whisk in the egg yolks, lemon juice, and Dijon mustard. Season with salt and pepper. Reduce heat to low and continue whisking until the sauce thickens, about 5 minutes.

3. – Poach the eggs in simmering water for 3-5 minutes until the whites are set and the yolks are still runny.

4. – Arrange the crispy fries on a plate and top with the cheese curds, poached eggs, and crumbled bacon. Drizzle the hollandaise sauce over the top.

5. – Serve immediately and enjoy this indulgent breakfast poutine!

Notes

For a heartier meal, you can add sautéed mushrooms, spinach, or diced ham to the poutine. The hollandaise sauce can be made in advance and reheated gently before serving.
