Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– Buttercream frosting
– Christmas-themed sprinkles
Instructions
1. – Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. – In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
3. – Beat in the egg and vanilla extract until well combined.
4. – In a separate bowl, whisk together the flour, baking powder, and salt.
5. – Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
6. – Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
7. – Bake for 10-12 minutes, or until the edges are lightly golden.
8. – Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
9. – Once cooled, spread a generous amount of buttercream frosting on each cookie and top with festive Christmas sprinkles.
Notes
Store the cookies in an airtight container at room temperature for up to 5 days. For a softer cookie, add an extra egg yolk to the dough.
