Description

Discover the secret to a perfect, foolproof Butternut Soup Recipe in just 30 minutes! This velvety smooth soup is packed with nourishing ingredients and a touch of sweetness, making it the ultimate comfort food for chilly days.

Ingredients

– 1 medium butternut squash, peeled, seeded, and cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups vegetable broth

– 1 cup heavy cream

– 1 tsp ground cinnamon

– 1/2 tsp ground nutmeg

– Salt and pepper to taste

– Chopped fresh parsley for garnish

Instructions

1. 1. In a large pot, sauté the onion and garlic in a bit of olive oil until softened, about 5 minutes.

2. 2. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the squash is very tender.

3. 3. Carefully transfer the soup to a blender and blend until smooth and creamy. Return the soup to the pot.

4. 4. Stir in the heavy cream, cinnamon, and nutmeg. Season with salt and pepper to taste.

5. 5. Reheat the soup gently and serve warm, garnished with chopped fresh parsley.

Notes

For a thicker soup, use less broth. You can also add a splash of sherry or apple cider for extra flavor. Leftover soup can be stored in the refrigerator for up to 5 days or frozen for later use.
