Ingredients
– 1 medium butternut squash, peeled, seeded, and cubed
– 4 tablespoons unsalted butter
– 3 garlic cloves, minced
– 2 tablespoons fresh thyme leaves
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 4 ounces crumbled goat cheese
Instructions
1. – Preheat the oven to 400°F (200°C).
2. – Spread the cubed butternut squash on a large baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat.
3. – Roast the squash for 25-30 minutes, or until tender and lightly caramelized, flipping halfway through.
4. – While the squash is roasting, melt the butter in a small saucepan over medium heat. Cook, stirring occasionally, until the butter is nutty and golden brown, about 5-7 minutes.
