Description

Savor the velvety texture and rich, nutty flavors of this Butternut Squash With Brown Butter And Goat Cheese dish. Roasted butternut squash is tossed in a heavenly brown butter sauce and topped with creamy, tangy goat cheese for a comforting and indulgent autumn meal.

Ingredients

– 1 medium butternut squash, peeled, seeded, and cubed

– 4 tablespoons unsalted butter

– 3 garlic cloves, minced

– 2 tablespoons fresh thyme leaves

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 4 ounces crumbled goat cheese

Instructions

1. – Preheat the oven to 400°F (200°C).

2. – Spread the cubed butternut squash on a large baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat.

3. – Roast the squash for 25-30 minutes, or until tender and lightly caramelized, flipping halfway through.

4. – While the squash is roasting, melt the butter in a small saucepan over medium heat. Cook, stirring occasionally, until the butter is nutty and golden brown, about 5-7 minutes.

5. – Remove the pan from the heat and stir in the minced garlic and fresh thyme.

6. – Transfer the roasted butternut squash to a serving bowl. Drizzle the brown butter sauce over the top and gently toss to coat.

7. – Sprinkle the crumbled goat cheese over the squash and serve immediately.

Notes

This dish can be served as a main course or a side. For a heartier meal, you can add cooked chicken or sautéed greens. The brown butter and goat cheese also pair well with roasted pork or lamb.
