Ingredients
– 1 head green cabbage, shredded
– 3 large carrots, peeled and sliced
– 1 large onion, diced
– 3 celery stalks, sliced
– 4 garlic cloves, minced
– 6 cups low-sodium vegetable broth
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– 1 bay leaf
– Salt and black pepper to taste
Instructions
1. 1. In a large pot or Dutch oven, sauté the onions and garlic in a splash of broth over medium heat until softened, about 3-4 minutes.
2. 2. Add the carrots, celery, and cabbage. Pour in the vegetable broth and stir in the tomato paste, thyme, and bay leaf. Season with salt and pepper.
