Description

This Cabbage Soup Recipe is a comforting and nourishing dish that’s perfect for chilly nights or when you need a quick, healthy dinner. Packed with fresh vegetables and simmered in a flavorful broth, it’s a delicious and satisfying meal the whole family will love.

Ingredients

– 1 head green cabbage, chopped

– 3 carrots, peeled and sliced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups low-sodium vegetable or chicken broth

– 1 (15 oz) can diced tomatoes

– 2 bay leaves

– 1 tsp dried thyme

– Salt and black pepper to taste

Instructions

1. 1. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.

2. 2. Add the chopped onion and sauté for 3-4 minutes, until translucent.

3. 3. Add the minced garlic and sauté for an additional minute, until fragrant.

4. 4. Add the sliced carrots and chopped cabbage to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables start to soften.

5. 5. Pour in the vegetable or chicken broth and diced tomatoes. Add the bay leaves and dried thyme.

6. 6. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the cabbage and carrots are tender.

7. 7. Season with salt and black pepper to taste.

8. 8. Serve hot, garnished with fresh parsley or a sprinkle of Parmesan cheese, if desired.

Notes

For a heartier meal, you can add cooked protein like shredded chicken or ground beef. This soup also freezes well, so you can make a big batch and enjoy it later.
