Ingredients
– 4 boneless, skinless chicken breasts
– 8 oz fresh mozzarella cheese, sliced
– 12 fresh basil leaves
– 2 tbsp balsamic glaze
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F.
2. – Pound the chicken breasts to an even thickness, about 1/2 inch thick.
3. – Season the chicken with salt and pepper.
4. – Place the chicken in a baking dish and top each piece with 2 slices of mozzarella cheese.
5. – Bake for 18-20 minutes, or until the chicken is cooked through and the cheese is melted.
6. – Remove from the oven and top each piece of chicken with 3 fresh basil leaves.
7. – Drizzle the balsamic glaze over the top.
8. – Serve immediately and enjoy!
Notes
This dish can also be made on the stovetop. Simply sear the chicken in a skillet until cooked through, then top with mozzarella and basil and finish under the broiler until the cheese is melted.
