Description

Ingredients

– 2 cups all-purpose flour

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1/4 cup olive oil

– 3/4 cup milk

– 2 eggs

– 1 cup diced tomatoes

– 1 cup shredded mozzarella cheese

– 1/4 cup chopped fresh basil


Instructions

1. – Preheat oven to 375°F. Grease a 9×5-inch loaf pan.

2. – In a large bowl, whisk together the flour, baking powder, and salt.

3. – In a separate bowl, combine the olive oil, milk, and eggs. Mix well.

4. – Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).

5. – Gently fold in the diced tomatoes, mozzarella, and chopped basil.

6. – Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

7. – Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

– For extra flavor, you can add a sprinkle of garlic powder or Italian seasoning to the batter.
