Ingredients
– 1 sheet puff pastry, thawed
– 2 tbsp olive oil
– 3 large onions, thinly sliced
– 2 garlic cloves, minced
– 1 tsp fresh thyme, chopped
– 1/4 tsp salt
– 1/8 tsp black pepper
– 4 oz goat cheese, crumbled
– 1 egg, beaten with 1 tbsp water for egg wash
Instructions
1. 1. Preheat oven to 400°F (200°C).
2. 2. In a large skillet, heat the olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes, until the onions are caramelized and golden brown.
3. 3. Add the minced garlic, thyme, salt, and pepper. Cook for an additional 2-3 minutes, until fragrant.
4. 4. Unfold the puff pastry sheet and cut it into 6 equal rectangles. Transfer the rectangles to a parchment-lined baking sheet.
5. 5. Divide the caramelized onion mixture among the puff pastry rectangles, leaving a 1/2-inch border around the edges.
6. 6. Sprinkle the crumbled goat cheese over the onion mixture.
7. 7. Brush the exposed pastry edges with the egg wash.
8. 8. Bake for 18-20 minutes, or until the pastry is golden brown and puffed.
9. 9. Allow to cool for 5 minutes before serving.
Notes
For a richer flavor, add a splash of balsamic vinegar to the caramelized onions. Serve these tarts as an appetizer or a main course, paired with a fresh salad for a complete meal.
