Description

Carnitas Tamale Pie is a delicious twist on classic tamale pie, featuring tender, flavorful carnitas, creamy masa, and melted cheese. This comforting and easy-to-make dish is perfect for busy weeknights.


Ingredients

– 2 lbs pork carnitas, shredded

– 1 cup masa harina

– 2 cups chicken or beef broth

– 1 cup shredded Monterey Jack cheese

– 1/2 cup sliced black olives (optional)

– 1 tbsp chili powder

– 1 tsp cumin

– 1/2 tsp garlic powder

– Salt and pepper to taste


Instructions

1. – Preheat oven to 375°F.

2. – In a large bowl, mix together the shredded carnitas, masa harina, and 1 cup of the broth until well combined.

3. – Press the masa mixture into a greased 9-inch pie dish, forming a crust up the sides.

4. – Pour the remaining 1 cup of broth over the masa crust.

5. – Top with the shredded cheese and sliced black olives (if using).

6. – Bake for 30-35 minutes, until the crust is golden brown and the cheese is melted and bubbly.

7. – Let cool for 5 minutes before slicing and serving.

Notes

For extra flavor, try adding a teaspoon of dried oregano or a pinch of red pepper flakes to the masa mixture. Leftovers can be stored in the refrigerator for up to 4 days.
