Description

Tender, golden-brown cauliflower florets in a creamy, nutty cashew sauce. This quick and easy dish is ready in just 20 minutes for a delicious, healthy weeknight meal.


Ingredients

– 1 head of cauliflower, cut into florets

– 1 cup raw cashews

– 2 cloves garlic, minced

– 1 cup unsweetened almond milk (or regular milk)

– 1 tbsp olive oil

– 1 tsp ground cumin

– 1/2 tsp paprika

– Salt and pepper to taste


Instructions

1. 1. Preheat the oven to 400°F (200°C).

2. 2. Spread the cauliflower florets on a baking sheet and drizzle with olive oil. Season with salt and pepper.

3. 3. Roast the cauliflower for 15-20 minutes, or until tender and lightly browned.

4. 4. While the cauliflower is roasting, blend the cashews, garlic, almond milk, cumin, and paprika in a high-speed blender until smooth and creamy.

5. 5. Remove the roasted cauliflower from the oven and transfer it to a serving dish.

6. 6. Pour the creamy cashew sauce over the cauliflower and gently toss to coat.

7. 7. Serve hot and enjoy!

Notes

– For extra crispiness, broil the cauliflower for 2-3 minutes after roasting.
