Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 3 medium potatoes, peeled and diced

– 4 cups beef broth

– 2 cups milk

– 2 cups shredded cheddar cheese

– 2 tablespoons tomato paste

– 1 teaspoon Worcestershire sauce

– 1 teaspoon dried parsley

– 1/2 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled. Drain excess fat.

2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until the onion is translucent.

3. – Stir in the diced potatoes, beef broth, milk, tomato paste, Worcestershire sauce, parsley, thyme, salt, and pepper.

4. – Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

5. – Remove from heat and stir in the shredded cheddar cheese until melted and fully incorporated.

6. – Serve hot, garnished with additional cheese, bacon bits, or chopped green onions if desired.

Notes

This soup can be made ahead of time and reheated, or frozen for later. For a thicker consistency, you can add a roux or cornstarch slurry. Customize the cheese to your preference, such as using a blend of cheddar and Monterey Jack.
