Ingredients
– 2 cups mixed diced vegetables (such as bell peppers, onions, and zucchini)
– 1 1/2 cups shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1/2 teaspoon dried oregano
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
– 1 sheet of puff pastry, thawed according to package instructions
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine the diced vegetables, cheddar cheese, Parmesan cheese, olive oil, garlic powder, oregano, salt, and black pepper. Mix well until everything is evenly distributed.
3. Unfold the puff pastry sheet and roll it out slightly to smooth out any creases.
4. Spoon the vegetable and cheese mixture onto the center of the puff pastry sheet, spreading it out in a line from one side to the other.
5. Carefully roll up the puff pastry, starting from one long side and rolling towards the other. Pinch the seam to seal.
6. Slice the rolled-up puff pastry into 12 equal pieces and arrange them on the prepared baking sheet, cut-side up.
7. Bake for 20-25 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
