Ingredients
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 cup milk
– 1 teaspoon vanilla extract
– 1 cup fresh cherries, pitted and halved
– 1/2 cup sliced almonds
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
3. In a separate bowl, cream the softened butter until light and fluffy. Beat in the eggs one at a time, then stir in the milk and vanilla extract.
4. Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Fold in the fresh cherries and sliced almonds.
5. Pour the batter into the prepared loaf pan and spread it evenly.
6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the Cherry Almond Bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
Notes
For best results, use fresh, ripe cherries. You can also substitute dried cherries if fresh are not available. To add extra almond flavor, add a teaspoon of almond extract to the batter.
