Ingredients
– 1 cup pitted fresh or frozen cherries
– 1/4 cup amaretto liqueur
– 3 large egg yolks
– 1/2 cup granulated sugar
– 1 pound mascarpone cheese
– 1 cup strong brewed coffee, cooled
– 24 ladyfingers
– 2 tablespoons unsweetened cocoa powder
Instructions
1. 1. In a small bowl, combine the cherries and amaretto. Set aside.
2. 2. In a medium bowl, whisk the egg yolks and sugar until light and fluffy.
3. 3. In a separate bowl, beat the mascarpone until smooth.
4. 4. Fold the mascarpone into the egg yolk mixture until well combined.
5. 5. Quickly dip the ladyfingers into the coffee, then arrange a single layer in the bottom of an 8×8-inch baking dish.
6. 6. Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherry-amaretto mixture.
7. 7. Repeat the layers of ladyfingers, mascarpone, and cherries.

9. 9. Refrigerate for at least 6 hours, or up to 3 days, before serving.
Notes
For a richer flavor, use espresso instead of regular coffee. Garnish with additional cherries or shaved chocolate, if desired.
