Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

– 1 cup fresh or frozen pitted cherries

– 1/4 cup balsamic vinegar

– 2 tbsp olive oil

– 2 cloves garlic, minced

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – In a large bowl, combine the chicken, cherries, balsamic vinegar, olive oil, garlic, thyme, salt, and pepper. Toss to coat the chicken evenly.

2. – Thread the chicken and cherry mixture onto skewers, leaving a small space between each piece.

3. – Preheat grill or grill pan to medium-high heat. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the cherries are slightly charred.

4. – Serve the Cherry Balsamic Chicken Skewers hot, garnished with fresh thyme or parsley if desired.

Notes

For a more intense cherry flavor, you can use a cherry balsamic vinegar in place of regular balsamic. This recipe can also be baked in the oven at 400°F for 20-25 minutes.
