Ingredients
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 cup short-grain rice, rinsed
– 8 cups chicken broth
– 2 tablespoons grated fresh ginger
– 1 teaspoon salt
– 1/4 teaspoon white pepper
– Toppings: sliced scallions, cilantro, soft-boiled egg, fried shallots, etc.
Instructions
1. In a large pot, combine the chicken, rice, chicken broth, ginger, salt, and white pepper.
2. Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer for 45-60 minutes, stirring occasionally, until the rice has broken down and the congee has a thick, porridge-like consistency.
3. Taste and adjust seasoning as needed.
4. Ladle the Chicken Congee into bowls and top with your desired toppings.
Notes
– For a richer flavor, use bone-in chicken and simmer for longer to extract more flavor from the bones.
– Customize the toppings to your liking, such as crispy fried garlic, pickled vegetables, or a drizzle of chili oil.
