Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 8 cups chicken broth
– 8 oz egg noodles
– 2 bay leaves
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat.
2. – Add the onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.
3. – Stir in the garlic and cook for 1 minute until fragrant.
4. – Add the chicken, chicken broth, egg noodles, bay leaves, and thyme. Season with salt and pepper.
5. – Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through and the noodles are tender.

Notes
