Ingredients
– 2 boneless, skinless chicken breasts, diced
– 3 medium potatoes, peeled and diced
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 2 cups milk
– 2 tablespoons butter
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, melt the butter over medium heat.
2. – Add the diced onion and sauté for 3-4 minutes until translucent.
3. – Add the minced garlic and sauté for 1 minute until fragrant.
4. – Add the diced chicken and cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned.
5. – Pour in the chicken broth and milk, then add the diced potatoes, thyme, and parsley.
6. – Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
7. – Season with salt and pepper to taste.
8. – Serve hot, garnished with additional parsley if desired.
