Ingredients

– 1 (4-5 pound) whole chicken

– 1 tablespoon olive oil

– 2 teaspoons garlic powder

– 1 teaspoon paprika

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1/2 teaspoon dried thyme

– 1/2 teaspoon dried rosemary


Instructions

1. Preheat your oven to 425°F (220°C).

2. Pat the chicken dry with paper towels and place it on a clean work surface.

3. In a small bowl, mix together the olive oil, garlic powder, paprika, salt, black pepper, thyme, and rosemary.

4. Rub the seasoning mixture all over the chicken, making sure to get it under the skin and into the cavity.

5. Truss the chicken with kitchen string to help it maintain its shape during roasting.

6. Place the chicken on a rotisserie spit or in a roasting pan and roast for 60-75 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast.

7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.

Notes

For extra crispy skin, you can baste the chicken with the pan juices every 15 minutes during roasting. Serve with your favorite sides, such as roasted potatoes, steamed vegetables, or a fresh salad.
